Creative Breakfast Ideas While On The "Clean Eating" Phase


1.) Caprese Avocado Toast

  • 1 slice of whole wheat or sourdough toast (toasted)

  • Top with small amount of low fat cottage cheese, ½ avocado, and tomato

  • Can drizzle with a light balsamic glaze

  • Side of fruit—such as a handful of strawberries or a ¼ cantaloupe; if you choose grapefruit, only do a ½. For a banana, only do ½. Most berries will just be a handful. A medium apple or orange are fine to have whole

2.) Oatmeal with fruit

  • If milk and sugar are needed, try to use 1% milk or nonfat (1/4 cup) and Stevia. Or just get the natural sugars from the berries.

  • Top the oatmeal with your favorite fruit such as strawberries, blueberries, or banana. If using a banana, only slice up ½ of one in your oatmeal

3.) 3 egg omelet

  • Add bacon, spinach, mushrooms, tomatoes, and avocado (or you can substitute for things that you like)

  • If using cheese, add no more than a 1/4 cup of shredded cheese or 1 slice

  • Side of fruit

4.) Breakfast sandwich

  • 1 egg any style (2 if scrambled), 2 slices of bacon, spinach, tomato, and a few slices of avocado on a toasted English muffin

  • If using a bagel or toast for the bread, only use a ½

  • If adding cheese, be sure to add no more than 1 slice

  • Side of fruit

5.) Breakfast salad

  • 2 eggs any style, 1 russet or sweet potato (baked and diced), ½ avocado, 6-7 cherry tomatoes, 1 serving of feta cheese on a bed of spinach salad leaves or “Spring Mix” salad leaves

  • Can use either olive oil and lemon for the dressing or a balsamic vinaigrette

6.) Breakfast potato

  • 1 egg any style, 2 strips of bacon, ¼ cup of shredded cheese, ½ avocado, sprinkle on chives (if desired), salt, and pepper baked inside of a sweet potato (Recipe below)

  • Directions

  1. Preheat oven to 425 degrees F

  2. Bake the potato in the oven until fork tender, about 45 to 50 minutes

  3. Remove from heat and let cool slightly. Alternately, you can also cook the potatoes in the microwave until fork tender, about 15 to 20 minutes

  4. Cut a round opening at the top of the potatoes, almost like a lid, and remove it

  5. Then using a spoon, scoop out most of the center. Or as much needed to make space for the egg

  6. Place the potato boats on a baking sheet and sprinkle the inside with salt and pepper

  7. Sprinkle a little bit of cheese in each potato and then crack an egg into each boat

  8. Top with a bit of bacon and more cheese on top of the eggs

  9. Bake until the egg whites have set, but the yolks are still runny, about 10 to 15 minutes

  10. Remove from the oven and sprinkle with fresh chives

  11. Serve warm for breakfast or a quick and healthy supper with a side salad.
